I am not sure if this can help:

In your virtualdomains put this:
jolt.co.uk:alias-jolt

Then in alias dir make these files for users that do not exist:
.qmail-jolt-username

For users that have dot in username use ":" instead
example:
john.joe
.qmail-jolt-john:joe

but i think you can solve all problems by changing MX records in your DNS?

Some users are on the new server (both for relaying outgoing and IMAP/POP3), some are on the old (qmail based server, both for relaying outgoing and IMAP/POP3). I don't wish ALL jolt.co.uk e-mails to be redirected to the new server as I haven't migrated their accounts over to it yet and the e-mails would just go missing. Doesn't your suggestion do just that?

What I want to do is reroute all e-mails for jolt.co.uk but for which
users don't exist within qmail to cressida.jolt.couk.
